Tawheed Amin, PhD, is an Assistant Professor-cum-Junior Scientist in the Division of Food Science and Technology of Kashmir, India. He has been a Food Safety Officer in the Drug and Food Control Organization, Govt. of J&K. He has attended several national and international conferences, symposiums, and workshops and has presented poster papers. He has to his credit several national and international papers and popular articles. He holds a PhD in Food Technology from the Division of Food Science and Technology, Sher-e-Kashmir University of Agricultural Sciences and Technology, Kashmir, India.

Omar Bashir, PhD, is an Assistant Professor-cum-Junior Scientist (Food Technology and Nutrition) in the Department of Food Technology and Nutrition, Lovely Professional University, Punjab, India. He has published research and review papers, book chapters, and magazine articles. He has attended several national and international conferences and workshops. He was awarded by the Ministry of Food Processing Industries (MOFPI), India, for contributing to the concept of emerging technologies for powdered foods. He also has to his credit editorial board memberships for various reputed journals.

Shafat Ahmad Khan is working as an Assistant Professor in the College of Dairy and Food Technology, Jaipur, at Rajasthan University of Veterinary and Animal Sciences, India. He has a bachelor's from Sher-e-Kashmir University of Sciences and Technology Kashmir. He qualified GATE exam and was awarded a fellowship to pursue his master's degree in food process engineering at the Indian Institute of Technology Kharagpur. He has been awarded many projects and his research areas include extraction, greenhouse solar drying, refrigeration, and controlled atmosphere (CA) storage.
