Il sapore pungente della cipolla � dovuto alla presenza di disolfuro di allilpropile, un composto solforato. La cipolla possiede anche diverse propriet� medicinali ed � quindi esportata in quantit� considerevoli in diversi paesi. Il miglioramento della qualit� dei semi � un trattamento post-raccolta che migliora la germinazione, la crescita delle piantine e facilita la fornitura di semi e altri materiali necessari al momento della semina. Il priming e il rivestimento dei semi sono nuove tecniche che non solo mantengono la qualit� dei semi di cipolla durante lo stoccaggio, ma la migliorano. La persistenza dei fungicidi sul seme � di fondamentale importanza in quanto determina la durata dell'efficacia del trattamento durante la conservazione. Alcuni fungicidi, indipendentemente dalla quantit� di prodotto presente sul seme, inibiscono fortemente l'incidenza dei funghi.
