Eine zusammenlassende Darstellung der Physiologie des Fettstoffwechsels beirn Saugling ist vor fiber 50 Jahren in "Ergebnisse der inneren Medizin und Kin- derheilkunde" erschienen (FREUND). Seither haben unsere Kenntnisse und Vor- stellungen fiber die Physiologie des Fettstoffwechsels betrachtliche Wandlungen erfahren. Geblieben ist heute ffir die praktische Ernahrungslehre des Sauglings die Tatsache, daB einerseits das an der Brust ernahrte Kind "seinen Energie- bedarl zu einem so bedeutenden Teil in Form von Fett bestreitet, wie es in keinem spiiteren Lebensabschnitt auch nur anniihernd der Fall ist" (FREUND), und daB andererseits in der Sauglingsnahrung eine richtige Korrelation der Grundstoffe Fett, EiweiB und Kohlenhydrate von ausschlaggebender Bedeutung ist. Zu der Zeit, als FREUND seinen Ergebnisartikel schrieb, stand die Erkenntnis von der schlechten Vertraglichkeit des Fettes in der kfinstlichen Ernahrung des Sauglings 80 stark irn Vordergrund, daB die kiinstliche Ernahrungsweise bis auf die heutige Zeit dadurch nachhaltig beeinfluBt wurde und auch heute noch ein groBer Teil der Sauglingsnahrungen auf dem Prinzip einer relativ eiweiBreichen, fettarmen und kohlenhydratangereicherten Zusammensetzung beruht. Es hat aber schon damals nicht an Versuchen gefehlt, die Kuhmilch in der Zusammensetzung von Fett, EiweiB und Kohlenhydraten der Frauenmilch anzupassen (FBIEDENTHAL; Mih: . L: l!lR U. SCHLOSS). ERNST MULLER hat sich in einer Monographie 1937 mit der Bedeutung des Kuhmilchfetts ffir die Sauglingserniihrung eingehend beschii. ftigt.
