Seit EDUARD PFLUGER wissen wir, daB der Sitz der Verbrennungen die lebende Zelle ist. Der nachste Schritt war die Feststell ung des Materials, das ver brennt. Es sind nich t Kohlenstoff und Wasserstoff, wie urspriinglich angenommen wurde, sondern wie LIEBIG zuerst vermutete und MAGENDIE experimentell bewies, EiweiB, Kohlen- hydrate und Fette der Nahrung. Die urspriingliche Annahme von LIEBIG, daB das EiweiB aus dem arbeitenden Muskel stamme, lieB sich nicht mehraufrechterhalten. Mit dieser Feststellung war die 2. entscheidende Grundlage fUr eine Stoffwechsel- forschung geschaffen. Sie zerfiel nunmehr in 2 Aufgaben, die Untersuchung des respiratorischen Stoffwechsels und das stofflich orientierte Studium der inter- mediaren Umsetzungen im Korper. Erst beide zusammen ergeben ein vollstandiges Bild des Gesamtstoffwechsels, der sowohl einen Abbau hoherer Substanzen in niedere (Katabolismus), als auch einen Aufbau niederer zu hoheren (Anabolismus) umfaBt. Die nachsten groBen Entdeckungen betrafen 1842 den EiweiBumsatz. LIEBIG, der Begriinder der modern en organischen Analyse, sah im Urinstickstoff das MaB fUr die GroBe der EiweiBverbrennungen. Den experimentellen Beweis erbrachten BIDDERU. SCHMIDT.DENNES und CAHOWS wiesen nach, daB aus 15-16gNahrungs- stickstoff 30-32 g Harnstoff im Urin entstehen.
