Der Rapid Visco Analyzer (RVA) wird in experimentellen Studien verwendet, um die Eigenschaften von St�rke w�hrend des Gelatinierungs- und Retrogradationsprozesses zu analysieren. Der RVA ist ein effizientes Werkzeug zur Untersuchung der Klebeeigenschaften von St�rke. Der Einsatz des RVA in vielen Lebensmitteln ist sinnvoll, da er eine vollst�ndige Analyse in maximal 20 Minuten erm�glicht, einfach zu bedienen ist, vielseitige Testm�glichkeiten bietet und die Eigenschaften der St�rke direkt demonstriert. Bei Allzweckmehl wurden die Klebeeigenschaften mit dem RVA gemessen und es zeigte sich, dass sie denen �hneln, die mit dem Brabender-Viscoamylographen gemessen wurden.
