Les capteurs à fibre optique à réseau de Bragg (FBG) sont utilisés pour les procédés de fabrication de matériaux composites afin de suivre la température et la déformation (ou contraintes). Dans le manuscrit nous détaillons d'abord le principe et la physique du capteur FBG. Puis la métrologie et l'étalonnage du capteur FBG sont largement traités. Nous présentons aussi ce qui est observé lorsque la fibre est introduite dans le matériau de composite en carbone (L'intrusivité). Il est question du découplage de la température et de la déformation par différentes techniques. Le capteur FBG est d'abord appliqué au suivi lors de la cuisson de résines époxydes utilisées dans les composites. Enfin, les capteurs FBG sont introduits dans le procédé de fabrication de composite à infusion de résine LRI (Liquid Resin Infusion) afin de suivre les cycles de températures et de déformations au cours du cycle de cuisson. La dernière partie traite de la mesure de gradient de température ou de déformation par une méthode d'identification numérique de gradient s'inspirant de la méthode dite T-Matrix en exploitant tout le signal du FBG.
