Devido � melhoria do n�vel de vida nas cidades e � r�pida urbaniza��o que se verifica nas zonas rurais, prev�-se que o consumo de produtos � base de tomate aumente de forma constante. No presente estudo, a pasta de tomate enlatada foi irradiada para aumentar o prazo de validade. A pasta de tomate enlatada foi irradiada com duas doses diferentes, ou seja, 1 e 3 kGy. Os resultados da an�lise composicional, nomeadamente o teor de humidade, o teor de cinzas, o teor de gordura, o teor de hidratos de carbono e o teor de TSS, foram comparados com a amostra de controlo que n�o foi irradiada. A dose de 3 kGy foi considerada a dose otimizada ap�s a compara��o dos resultados com artigos publicados. Durante a 1.a semana, o teor de humidade na amostra de pasta de tomate enlatada irradiada com uma dose de 3 kGy foi de 22 g/100 g, cinzas 2,65 g/100 g, TSS 1,9 % Brix, prote�nas 0,1 g/100 g, gordura 0 g/100 g e hidratos de carbono 75,25 g/100 g. Durante a terceira semana, o teor de humidade na amostra de pasta de tomate enlatada irradiada com uma dose de 3 kGy foi de 11 g/100 g, cinzas 2,29 g/100 g, TSS 0,87 % Brix, prote�na 0,06 g/100 g e hidratos de carbono 94 g/100 g.
