La pomme est un fruit pr�cieux appartenant � la famille des Rosac�es. Les pertes apr�s r�colte sont dues au transport, � une mauvaise manipulation pendant la r�colte et le stockage, et surtout � des attaques microbiennes. La pr�sente �tude a �t� men�e afin d'observer les effets des rayons gamma sur la valeur nutritionnelle des pommes, avant et apr�s irradiation. Les doses utilis�es pour l'irradiation �taient de 1,0, 1,5 et 2,0 kGy et les pommes ont �t� stock�es � temp�rature r�frig�r�e (4 C). Une analyse imm�diate a ensuite �t� effectu�e afin de d�terminer les effets du rayonnement gamma sur les composants nutritionnels des pommes. Ces param�tres comprennent le pourcentage de perte de poids, la perte de teneur en cendres, la perte de teneur en humidit�, la perte de teneur en graisses ou en lipides, la perte de fibres brutes, la perte de prot�ines brutes et �galement les sucres ou les glucides. En mesurant ces param�tres, avant et apr�s l'irradiation gamma, la valeur nutritionnelle des pommes t�moins et des pommes irradi�es � diff�rentes doses a �t� �valu�e. Les r�sultats ont montr� qu'il n'y a pas de diff�rence majeure entre la valeur nutritionnelle des pommes t�moins et celle des �chantillons irradi�s, ce qui permet d'augmenter la dur�e de conservation, ce qui serait �conomiquement utile en augmentant les exportations.
