Die Qualität von Nahrungsmitteln ist zu einem zentralen Ziel der Agrar- und Ernährungspolitik geworden. Nahrungsmittelqualität ist eine wesentliche Voraussetzung für Ernährungsqualität und damit auch für den gesundheitlichen Status der Bevölkerung. Trotz dieser gro en Bedeutung ist Nahrungsmittelqualität immer noch ein umstrittener Begriff und wird z.B. aus naturwissenschaftlicher und ökonomischer Sicht völlig unterschiedlich definiert. In dieser Studie wird ein systematischer Überblick über Grundkonzepte von Nahrungsmittelqualität gegeben, und es werden Kriterien der Qualitätsbewertung aus Sicht der Wissenschaft, der Verbraucher und der Produzenten herausgearbeitet. Zwei Expertenbefragungen zeigen, dass es Zielkonflikte zwischen verschiedenen Kriterien für Nahrungsmittelqualität gibt. Auf der Grundlage einer ökonomischen Analyse der Nahrungsmittelqualität werden dann Handlungsoptionen der Privaten und des Staates zur Qualitätssicherung untersucht und bewertet.

About The Author

Die Autoren: Andreas Böcker, geboren 1966 in Lünen/Westfalen, studierte Agrarwissenschaften an der Universität Kiel. Promotion 1996. Seit 1999 Wissenschaftlicher Mitarbeiter an der Universität Gießen, seit 2003 Vertretungsprofessur für Landwirtschaftliche Marktlehre an der Fachhochschule Neubrandenburg. Arbeitsschwerpunkte sind die vertikale Koordination in der Land- und Ernährungswirtschaft und das Verbraucherverhalten bei Qualitätsunsicherheit.
Roland Herrmann, geboren 1952 in St. Georgen/Schwarzwald, studierte Volkswirtschaftslehre an den Universitäten Tübingen und Göttingen. Wissenschaftlicher Mitarbeiter, Promotion (1981) und Habilitation (1987, Agrarökonomie) an der Universität zu Kiel; Visiting Researcher an der University of Pennsylvania und dem Food Research Institute, Stanford University (1985-1986); Forschungsgruppenleiter am Institut für Weltwirtschaft der Universität zu Kiel (1986-1989). Er ist Professor für Marktlehre der Agrar- und Ernährungswirtschaft und Direktoriumsmitglied des Zentrums für internationale Entwicklungs- und Umweltforschung (ZEU). Arbeitsschwerpunkte sind Agrarmarktanalysen und -politik sowie internationaler Handel.
Michael Gast, geboren 1974 in Heidelberg, studierte Ökotrophologie, Fachrichtung Ernährungsökonomie an der Universität Gießen, verbunden mit ERASMUS-Aufenthalten an den agrarwissenschaftlichen Fakultäten der ETH Zürich und der Universität Perugia. Seine Arbeitsschwerpunkte sind internationaler Handel und Direktinvestitionen.
Jana Seidemann, geboren 1967 in Hofheim/Taunus, hat Studienabschlüsse als Dipl-Ing. (FH) für Weinbau und Oenologie der FH Wiesbaden und als Diplom-Oenologin der Universität Gießen. Promotion an der Universität Gießen (2000). Ihr Arbeitsschwerpunkt ist die ökonomische Analyse des Weinmarktes.
