Le pr�sent travail a pour objectif d'�tudier la survie de deux souches d'E. coli EC1 et EC2 en fonction de certains proc�d�s rencontr�s lors de la fabrication et la transformation des aliments. La survie d'E. coli dans des conditions acides r�v�le que les deux souches EC1 et EC2 montrent le m�me degr� de r�sistance aux pH 4,5 et 6. Toutefois, la viabilit� bact�rienne �tait nettement diminu�e � pH 2,5. De m�me, l'�ge de l'inoculum et la pr�adaptation jouent un r�le majeur dans la survie bact�iennes au stress acide. Par ailleurs, la thermor�sitance d'E. coli est davantage favoris�e lorsque les cellules bact�riennes sont pr�alablement expos�es � une temp�rature de 44 C pendant 1 heure ou adapt�es � un environnement acide. D'autre part, les acides organiques test�s affectent la survie cellulaire selon l'ordre suivant: acide citrique> acide ac�tique> acide lactique. La r�ponse cellulaire au stress oxydant, r�v�le que les souches d'E. coli survivent mieux � basse temperature (5 C). Le pouvoir inhibiteur du nitrite de sodium s'est av�re plus �lev� � pH acide.
