Published in association with the International Sugar Organization, it traces the history of sugar production, consumption and trade from earliest times to the present day. The authors explore the reasons behind the structural change undergone by the market during the last decade and consider the future for sugar in the context of political change and health and social issues. Serving equally well as a reference on specific topics and as an overview of the world sugar economy, the book begins with a brief history of the origins of sugar cultivation and trade placing sugar in its political and sociological context. This is followed by a review of the world sugar economy today which examines national and international policies and patterns of demand and supply. Consumption of alternative sweeteners is also discussed. A structural analysis of the world trade is presented and trading techniques are explained. Key issues for the future are examined and the appendices discuss health, the environment, the fuel alcohol programme in Brazil and international sugar agreements. This book will be an invaluable reference for traders and specialists looking to broaded their knowledge and anyone seeking an introduction to the fascinating world of sugar.

Spence, Donald: - Donald Spence has been associated with the sugar market since the reinstatement of futures trading in 1957. As one of the original floor traders he played a part in establishing the market and helping it to evolve into the truly international arena that it is today. In 1980 he joined E.D. & F. Man where he was chiefly engaged on research. He now writes extensively on commodities, futures and options and related topics.
