Actually, it's more sixty rather than fifty recipes because Whacker gives us several variations all of which include alcohol.
Classic starters include Prawn Cocktail; Bloody Mary Soup; Chicken Liver Pate with Brandy; Garlic Mushrooms with Chianti; Mussels with Tomatoes in White Wine; Garlic Prawns in White Wine; Lamb Kidneys with Bacon and Sherry; Bourbon Glazed Spare Ribs and Margarita Chicken Wings. He even gives us the famous BBQ recipe from the infamous American serial killer Ottis Toole.
Vegetarian recipes include Quadretti with Lemon and Vodka; Spaghetti Bolognese; Rigatoni with Tomatoes and Vodka; Fettucini Alfredo with White Wine; Risotto with White Wine and Mushrooms; Drunken French Onion Soup; Bloody Mary Salad; Red Cabbage, Apple Walnut and Sherry Salad, and a classic recipe for Bourbon Baked Beans.
Elegant Fish entrees include Smoked Salmon, Soave and Mushroom Spaghetti; Grilled Brill with a Red Wine Jus; Scotch Salmon and a Scotch Whisky Sauce; Grilled Prawn Catalan with Romesco Sauce; Beer Batter Fish and Chips; Margarita Prawn Salad; Monkfish with Red Wine Sauce; Garlic Prawns with Ouzo; and Hake with Marsala Cream.
When it comes to the Meat Entrees, Whacker surpasses himself with simple recipes for some of the world's most iconic dishes like Boeuf Bourguignon; Coq au Vin; Veal Marsala; Beef and Guinness Pie; and Hunter's Chicken as well as some new inventions like Breast of Chicken with Champagne Sauce; Boozy Burgers; Twice Cooked Pork Chops with Apple Cider Jus; Striploin Steak with Whiskey Pepper Sauce and finally, Pheasant with Mushrooms and Sherry.
When it comes to desserts Whacker excels with the usual classics like Sherry Trifle; Whiskey Sauce and Bread and Butter Pudding; Tiramisu; Pears poached in Red Wine; Zabaglione, and Crepes Suzette. Whacker Hennessy, otherwise William Harrogate Hennessy, is the last of the "WH" Hennessys from Ratass in the Kingdom of Kerry. His third cousin, twice removed was related by marriage to the second cousin, thrice removed of Richard Hennessy, the founder of the world's leading brand of Cognac, Hennessy. Whacker says, he himself, has been removed many times from various drinking emporiums. Whacker was educated in Gormantown College in Meath, Clongowes in Kildare and following expulsion from there was placed in Ampleforth College in Yorkshire in England. He studied Philosophy and Politics at Trinity College Dublin but spent most of his time in McDaid's Pub in Dublin's Harry Street and the holding cell of Pearse Street Garda Station around the corner, singing ballads and reciting poetry. Eventually, his great uncle Glasser Hennessy provided the funding for him to be sent to Le Cordon Bleau catering college in Paris. Whacker spent two years there but left before qualifying because he couldn't understand the language. He returned to Dublin, completed his degree in culinary arts and headed for Australia. For the next ten years he travelled the world, cooking in some of the most famous and prestigious Michelin star restaurants before returning to his beloved Killarney. Whacker Hennessy's Fifty Alcohol-infused Classic Recipes is his first cookery book. He is already working on a second which should be out in the Summer of 2016. He is married to his childhood sweetheart Colette, a union blessed with three beautiful daughters, Ellie, Mia and Fat Betty. Whacker is a lifelong Kerry supporter and Liverpool FC fan.
